What I usually do, is drybrush them with Dhenob Stone

I think it sort of depends on how you are doing your bases for your Uruks. If you are gluing gravel or small pebbles to the bases then it may be good to just follow the same method for the large boulders. For my Isengard Army I basecoat the whole base with Scorched Brown, then heavy drybrush with Codex Grey followed another drybrush with Fortress Grey. It gives the rocks a slightly earthy look.

I wanted mine to have an earthy appearence. I basecoated mine with an even mix of Chaos Black and Codex Grey. I then drybrushed the rocks with pure Codex Grey, then followed by a wash of Devlan Mud. Once this wash was dry, I finished off with a drybrush of Bleached Bone. It looked nice IMO. :)

Basecoat Scorched Brown.
Drybrush Scorched Brown/Adeptus Battlegrey (40:60).
Add Codex Grey to the mix.
Drybrush pure Codex Grey.
Drybrush pure Fortress Grey.
Wash Devlan Mud.
Drybrush pure Fortress Grey.
Drybrush Astronomican Grey.
(Light) Drybrush Astronomican Grey/Skull White.

Start from the bottom of the rock and gradually work your way up, the drybrushing gets gradually lighter as you go.

A few more layers than the other schemes^ but still fairly quick (it's just drybrushes and washes).

I did the uruk command set a little while ago. You can see them on page 6 of my WIP thread along with my color scheme for the rocks.
