I'm not a beginner but this is a beginner question sooo.... I'm just wondering what's the most up to date with the most profiles SBG rules manual TY

The rules haven't changed since the One Ring/Mines of Moria book.

Profiles though...every sourcebook has a changed profile and/or new ones. So you need either the One Ring book or the MoM booklet, plus the sourcebook for whatever region you're interested in.

The newest profiles (eg: Galadhrim) have been release via White Dwarf articles, many of which have been release as PDFs on the GW site. You need to register, sign in, and look around for the White Dwarf archives.
