Goblins are very good at overwhelming the enemy; despite their low health, their low cost and Command Points total means you can train hundreds at a time. This means you can also split the force and still have two major forces with which you can attack the enemy on two fronts.
You can also bring Gorkil out and summon three fire drakes that easily crush buildings and units alike (just watch out for your own units, which can also be set alight by the drake flames). If you have a lot of money, recruiting Drogoth can be very useful for quick building destruction. By doing short overflights, you can assault the enemy and not have an entire force wiped out by ground units - this is very useful against the Dwarven Factions.

I agree with the cheap orcs that don't do anything except stall people.

I love using all three flying Nazgul as my micro-manage hit force. They are just so fun to use while your orcs occupy everyone on the ground.

Catapult spamming is incredibly fun too, especially with Mordor because they have cheap cannon fodder. Just make about 15 catapults with flaming rocks and then set them to each individually bombard every bit of a narrow path to create a completely impassible area. Or (the more fun tactic), as soon as you see the enemy, send in your orcs, who mob the enemy and do absolutely nothing...except hold them there while catapults rain down death from above. And if you hit a few orcs...you've got more.

Another interesting tactic I've done once before was when I had a doomed mob of orcs and archers. They were being surrounded and had no reinforcements coming, so they were all going to be dead within the next ten seconds or so anyways. I ordered the archers to bombard themselves with flaming arrows -- right on top of themselves and the remaining orcs, and right where all the enemy models were crowding around to attack. Everyone in the middle got lit on fire, and for once my orcs actually took down some people with them. And it was hilarious to watch too.

TBH, I just started replaying the game - only a few missions in. Have never really gotten that far into the game itself, and I haven't had a chance to skirmish.
