I'm thinking about selling some items on ebay, but I have a question.
Does ebay take a part of the profit I make when selling? Also, is there anything else useful I should know before I jump into ebay selling?

Yes Ebay takes a "piece of the action". Also depending on what payment method you use, there could be more fees there. For example, Paypal also takes it's cut from your profits. Just look at other listings to see what others have done. Becareful what you say in your listing as that becomes the binding terms of the sale.
