Use him to defend your ranks or if you're desperate, use him to stall to keep a nasty formation of your rear, flanks etc. Ents and other monsters are very good at clearing out formations from defensible terrain. Do not charge him head-on into a formation, charge him into the flanks of the enemy. Use him to threaten cavalry and keep them away from your infantry guys. Of course, it is very hard for one ent to achieve this which is why you often can take several. But that's the pros the cons are: don't rely on your ent. An epic hero with a full stock of might can easily knock up the hard to kill chart to a deadly 6. Don't expect your ent to carve up the enemy formations, it won't, on average, you'll get about 4 or 5 kills a turn. The ent is best used as support but it can be used on its own against cavalry formations or very small formations (ents are also good against ambushers).
