Can Gandalfs Sorcerous blast attack knock any model over??

Mumak's special rule says that it can never be knocked, so that's pretty straightforward that it can't. I regarded the question as asking something along the lines of 'can it knock even models with S6+?' and the answer is yes.

Expanded you can blast anything! But the effects on what THEY HIT on the way change.

So potentially blast a cavetroll and it can knock over a balrog

No the rules say a model cannot knock a bigger model.

Actually that is where you are wrong from my readings.
It says if you are S5 or less and you hit a S5 or less model you knock it over, if you hit a S6 model you stop.
If you are S6 or more you simply keep going regardless.
